Passover: Eggplant Matzah Lasagna

We hosted an event with Trybal Gatherings / Trybal NYC to celebrate the upcoming Passover celebration. We challenged the participants to come up with Passover recipes using Rethink Food’s commonly donated Ingredients, and here’s the winner!

Team name: Baked Exodus

Recipe name: Eggplant Matzah Lasagna

BAKED EXODUS’ PASSOVER LASAGNA RECIPE

INGREDIENTS:

  • 6 sheets matzah

  • 3 diced tomatoes

  • 3 cloves garlic

  • 2 eggplants

  • 2 cups tomato sauce

  • 1 large onion, diced

  • 1 cup corn

  • 1 cup beans, cooked

  • Salt & pepper to taste

  • Optional: 1 cup cheese, shredded

INSTRUCTIONS:

  1. Preheat oven to 375 degrees. Lightly grease baking dish.

  2. Saute onions & garlic in olive oil until translucent. Add tomatoes, corn, beans, and salt/pepper. Cook until it has thickened.

  3. Cover the bottom of the baking dish with matzah. Spread the mixture over it, and add a layer of eggplant on top.

  4. Repeat, layering until all ingredients are used. Finish with a layer of the vegetable mixture. Sprinkle cheese on top if desired.

  5. Cover with tinfoil and bake for 40 minutes. Uncover and bake for another 10 minutes, until the top is golden brown.

  6. Let it sit for 10 minutes before slicing.

    *This dish serves as a reflection on the creativity and resilience of the Jewish people. Just as they had to make do with what they had during the journey from Egypt, this lasagna uses commonly donated ingredients in innovative ways, ensuring nothing goes to waste, and providing a hearty, comforting meal that brings everyone together – much like Passover itself.
